摘要:
目的 了解广西天峨县食品中食源性致病菌的污染状况,为建立科学完整的风险监测和评估体系提供科学依据。方法 于2011-2020年每年的3-10月份在天峨县辖区内的农贸市场、临时摊点、餐饮服务业、超市、小型商店及学校食堂等采样监测点按照《国家食品污染物和有害因素风险监测工作手册》和《食品安全国家标准 食品微生物学检验》系列方法,对抽检食品进行14种食源性致病菌检测,比较各年度食源性疾病致病菌检出率、不同食品类别及不同场所的食品食源性致病菌检出率。结果 2011-2020年共检测16类947份食品相关类样品,检出致病菌阳性样品115份,总检出率为12.14%,不同年度食源性致病菌检出率比较,差异有统计学意义(P<0.05);各种食源性致病菌的检出率比较,差异有统计学意义(P<0.05);2011-2020年监测的食品样品中有11类共115份样品检出食源性致病菌,蛋制品、冷冻饮品、膨化食品、调味品、食品相关用品(消毒餐具)等5类未检出致病菌;各类经营场所抽检样品的食源性致病菌检出率比较,差异有统计学意义(P<0.05)。结论 天峨县市场出售的食品受到不同程度多种食源性致病菌污染,是引发食源性疾病的重要危险因素,应进一步加强市场出售的食品监测和安全监管力度,从而减少可能引起食源性疾病的危险因素。
Abstract:
Objective To understand the contamination status of food-borne pathogens in food in Tian’e County, Guangxi, and to provide scientific basis for establishing a scientific and complete risk monitoring and evaluation system.Methods From March to October of each year from 2011 to 2020, sampling and monitoring points at farmer’s markets, temporary stalls, catering services, supermarkets, small shops and school canteens in Tian’e County were conducted in accordance with the National Food Contaminants and Harmful Factors. Risk Monitoring Work Manual and National Food Safety Standard Food Microbiological Inspection series of methods,14 types of food-borne pathogens were tested on random foods, and the detection rate of food-borne disease pathogens in each year, the detection rate of food-borne pathogens in different food categories and different places were compared.Results From 2011 to 2020, a total of 947 food-related samples of 16 categories were tested, 115 positive samples of pathogenic bacteria were detected, and the total detection rate was 12.14%. The detection rate of food-borne pathogens in different years was compared,the difference was statistically significant (P<0.05);The detection rate of various food-borne pathogens was compared,the difference was statistically significant (P<0.05);Among the food samples monitored from 2011 to 2020, 11 types of food-borne pathogens were detected in 115 samples.No pathogenic bacteria were detected in 5 categories of egg products, frozen drinks, puffed food, condiments, food-related supplies (sterilized tableware);The detection rate of food-borne pathogens in samples from various business establishments was compared,the difference was statistically significant (P<0.05). Conclusion The food on the market in Tian’e County is contaminated with various food-borne pathogens to varying degrees, which is an important risk factor for food-borne diseases.The monitoring and safety supervision of food on the market should be further strengthened to reduce the risk factors that may cause foodborne diseases.
