从常识上讲,人类将草本植物作为食物的历史可以追溯到远古时代。作为常见的草本植物,藜草被人类采摘食用已有悠久的历史。欧洲人食用藜草的种子和叶已有近三千年的历史,而印度和我国也有煮藜草作为经典野菜的历史。藜草植物包括大约250种,广泛分布在全球温带和热带地区,特别是在亚洲、非洲、欧洲和北美洲。藜草主要生长在田野和轻度盐碱地中。因此,藜草的生长习性和环境适应性很强。藜草为一年生或多年生的草本植物,很少作为亚灌木类型存在,基本上没有任何特殊的气味。一般来说,除了药用和饲料价值外,藜草的叶子和种子可以作为人类日常的食物成分。目前,藜草已被证明含有极其复杂的化学营养学成分。研究人员发现,藜草中含有可观的氨基酸和抗氧化化合物,如维生素C、多酚、类胡萝卜素、抗坏血酸和核黄素等。此外,在藜草中还存在一些对人体健康有益的必需酸、矿物质及膳食纤维。另一方面,藜草也含有一些潜在的危险和毒素,如食用不当,可能会对身体产生负面影响。本文主要对藜草的营养成分进行综述,分析其有益营养成分和有毒成分,总结烹饪方法对其营养成分的影响。
Abstract:
In terms of common sense, the history of humans using herbs as food can be traced back to ancient times.As a common herb,Chenopodium Album L has a long history of being picked and consumed by humans.Europeans have eaten the seeds and leaves of Chenopodium Album L for nearly three thousand years, and India and my country also have a history of boiled Chenopodium Album L as a classic wild vegetable.Chenopodium Album L includes about 250 species, widely distributed in temperate and tropical regions of the world, especially in Asia, Africa, Europe and North America.Chenopodium Album L mainly grows in fields and mildly saline-alkali soils. Therefore, the growth habit and environmental adaptability of Chenopodium Album L is very strong.Chenopodium Album L is an annual or perennial herb, rarely exists as a sub-shrub type, and basically does not have any special smell.Generally speaking, in addition to its medicinal and feed value, the leaves and seeds of Chenopodium Album L can be used as human daily food ingredients.At present, Chenopodium Album L has been proven to contain extremely complex chemical and nutritional components. Researchers have found that Chenopodium Album L contains considerable amino acids and antioxidant compounds, such as vitamin C, polyphenols, carotenoids, ascorbic acid and riboflavin.In addition, there are some essential acids, minerals and dietary fiber that are beneficial to human health in Chenopodium Album L.On the other hand, Chenopodium Album L also contains some potential dangers and toxins. If not eaten properly, it may have a negative impact on the body.This article mainly reviews the nutritional components of Chenopodium Album L, analyzes its beneficial and toxic components, and summarizes the effects of cooking methods on its nutritional components.
