摘要:
目的 探讨成都市郫都区某家庭聚餐发生的一起沙门氏菌感染事件的原因,为今后该类事件防控提供参考。方法 选取2020年6月25日成都市郫都区唐昌镇留驾村村民家中参加聚餐的22名亲属为调查对象,开展个案调查和现场卫生学调查,了解事件发生的流行病学特征;通过样品采集和实验室检测,获取实验室检测结果。结果 共有7例病例;26日4:00首个病例发病,6月26日6:00~12:00发病达到高峰;主要症状为腹泻(100%)、腹痛(71.43%)和发热(57.14%),罹患率为31.82%;7例病例年龄3~76岁,平均年龄47岁;总罹患率为31.82%;沙门氏菌检出4份(2名病例、1份粽子和1份皮蛋),检出率44.44%,均为鼠伤寒沙门氏菌。结论 该家庭聚餐中发生食物中毒事件是由沙门氏菌感染引起的,感染源为外购的粽子,中毒的原因为用品用具及食物交叉污染,为减少此类事件的发生,建议监管部门加强食品安全知识的宣传,与此同时将食品抽样重点转向小作坊、小摊贩和小经营店,并及时公布检测结果,以减少家庭式聚餐引起的食源性疾病。
Abstract:
Objective To explore the cause of a salmonella infection incident that occurred during a family dinner in Pidu District, Chengdu, and to provide references for the prevention and control of such incidents in the future.Methods 22 relatives who participated in a dinner in the homes of villagers in Liujia Village, Tangchang Town, Pidu District, Chengdu City on June 25, 2020 were selected as the survey subjects, case investigations and on-site hygiene investigations were carried out to understand the epidemiological characteristics of the incident;Obtain laboratory test results through sample collection and laboratory testing.Results There were 7 cases in total; the first case onset occurred at 4:00 on the 26th, and the peak onset was reached between 6:00 and 12:00 on June 26;The main symptoms are diarrhea (100%), abdominal pain (71.43%) and fever (57.14%), and the attack rate is 31.82%;The ages of the 7 cases were 3 to 76 years, with an average age of 47 years; the total attack rate was 31.82%;Salmonella was detected in 4 cases (2 cases, 1 rice dumpling and 1 preserved egg), with a detection rate of 44.44%, all of which were Salmonella typhimurium.Conclusion The food poisoning incident during the family dinner was caused by Salmonella infection. The source of infection was Zongzi purchased from outside. The cause of the poisoning was cross-contamination of supplies and food. In order to reduce the occurrence of such incidents,it is recommended that the regulatory authorities strengthen the propaganda of food safety knowledge, and at the same time shift the focus of food sampling to small workshops, small vendors and small business shops, and announce the test results in time to reduce food-borne diseases caused by family meals.
