摘要:
目的 探讨如何调查一起食物中毒的原因。方法 根据患者临床表现,对2017年1月7日某婚宴酒店进行现场流行病学调查,具体采集环境和物表样本、从业人员和病例肛拭子、粪便、呕吐物等,同时根据卫生学调查结果结合现场采集样本的实验室结果进行综合判断。结果 本次发生食物中毒患者共27例,罹患率为29.03%(27/93),多名患者排泄物检出副溶血性弧菌。结论 处理食物中毒事件采样时应采集剩余食品、环境与物表样本、从业人员样本、病例样本(特别是重症病例和首发病例)这四类样品,只有足量采集到这四类样本,才能确定致病因子,找出污染源和污染途径。
Abstract:
Abstract:Objective To investigate the cause of a case of food poisoning.Methods According to the clinical manifestations of the patients,a field epidemiological survey was conducted in a wedding banquet hotel on January 7th,2017.Specific collection of environmental and physical samples,practitioners and cases of anal swabs,feces,vomit,etc.,and comprehensive judgment based on the results of the hygiene survey combined with the laboratory results of on-site sample collection.Results There were 27 cases of food poisoning,the attack rate was 29.03%(27/93).Vibrio parahaemolyticus was detected in feces of many patients.Conclusion When sampling food poisoning events,we should collect four kinds of samples,such as surplus food,environment and surface samples, employees’samples,case samples(especially severe cases and initial cases),only when these four samples are collected,can we identify the pathogenic factors and find out the sources of pollution and the way of pollution.
